Our Week

I can't tell you much I love Ben's imaginative play.  It is essentially him playing "Daddy" to all of his trucks.  Here he is helping them with "Circle Time".  We went around the circle and named each car after one of the kids in his class.  So cute.


Then he flipped them all onto their backs for nap time and kissed each one.


A couple weeks ago I took a Friday off work.  Callie and I took the kids to a park down in Renton that I love and was excited to show them, followed by a stroll through and lunch at Ikea and then ice cream at McDonalds.  A perfect morning!


I finally caught up on Callie's blog and found these pictures she had posted:



At a park in Woodnville, waiting for Greg to get back from his run and meet us there.  Greg is such a stud - he has us drop him off 5-6 miles away on the Burke Gilman Trail and then he runs to meet us! 




A tribute to Greg on Father's Day.  Every single day I feel lucky that he is Ben's dad (and my husband)!  I'm certain Ben feels the same :)

Several months ago, Lisa, Evan, Greg and I purchased tickets to take a cooking class at The Pantry.  The day finally arrived and of COURSE it was 90+ degrees in a kitchen with no air conditioning ;)  Luckily, it didn't take any of the fun!  We learned to make:

We attended the Eat Run Hope event put together by Ethan Stowell Restaurants and ate and drank our hearts out.  And now I'm never eating again.

Meal Planning: Week of June 29th

Review from last week: 

We celebrated Greg on Father's Day by making him cook dinner for us :)  Good thing he loves his grill and is always happy to use it.  Delicious flank steak and salad.


Chicken tortilla soup for dinner (and a few lunches this week).  I love a good crock pot recipe.

 Blue Apron - salmon and quinoa/pea shoot salad.

Lamb and risotto-style ditalini pasta with green beans.



Miso-Roasted chicken with spring pea salad and jasmine rice.


Plan for next week:

Friday: Flank steak tacos with home made guacamole.

Saturday: We have a cooking class at The Pantry with Lisa and Evan that we booked several months ago.  I'll get stuff for Ben and my mom to make a Boboli pizza :)

Sunday:  Out - date night #2 in one weekend!

Monday: Grilled chicken or flank steak and salad.

Tuesday: Blue Apron Meal: Grilled Cheeseburgers with Feta-Watermelon Salad & Pickled Watermelon Rind.

Wednesday: Dinner at Shauna and Brandon's (rescheduled from last week when Ben and I were sick).


Thursday: Blue Apron Meal: Buttermilk Fried Chicken with Kale-Cabbage Slaw & Biscuits

Friday: Blue Apron Meal: New England-Style Shrimp with Grilled Green & Yellow Wax Bean Salad

An Update: 3 Years, 9 Months



I'm finding that since Ben was born, the time seems to go by faster and faster with each year. 2015 - almost 1/2 way over?  No way.  Nearing 4 years old?  Not even remotely possible.

Since the last update (5 months ago), Ben has grown up so much.  He has gained at least 2 pounds and probably over an inch in height.  He TOWERS over all of the kids in his class.  He is still in 4T but I will not be buying anymore 4T clothing for him - he will be on to the next size before much longer!

I would have to say that the biggest milestone that he has hit since our last update is that he is FULLY (okay, except for the fact that he wears pullups at night) POTTY TRAINEDDDDDDDDDDDDDDDD!  Just like with speech, and every single other thing I've been told "he will do when he is ready" this came FAR too easy....once he felt like doing it.  Unlike the other "baby" things he used to do, changing diapers is something I am quite ready to be done with :)  We are so proud of our big boy!

His speech (words, pronunciation) grows and develops daily.  I'm mentally exhausted at the end of the day from all of the questions, comments, random thoughts, songs, and counting coming out of his mouth.  It's SO awesome though - and so hilarious what we hear come out of his mouth.  Greg and I REALLY have to watch what we say now.  He is constantly repeating things and phrases we say to him and to each other.  

He offers me choices all day long (because I do that with him):

"Mom, do you want to play trucks with me?  Or do you want to play Play-Doh"?

He threatens me:

"If you do that again, you won't get a surprise, OKAYYYYY"?

He makes sure I know the rules:

"Mom, we don't hit in the family.  Do we?  Do I hit kids?  No, I don't hit kids".

Questions.  Repetitive questions.  And occasionally referring to himself in the third person:

"Mom, is this a tow truck?  (Yes).  Is it a tow truck?  (Yes).  Is it?  (Yes).  Is it Ben's tow truck?  (Yes)".

And luckily, manners:

"Thank you for my kiss, mom!  Can I have a hug, too?  Can I have a yogurt please"?

It's so fun, but I would be lying if I said we didn't wish there was a pause button occasionally ;) 

Dreaming, feelings, memories:

The other night, Ben woke up crying in the middle of the night and was nearly SCREAMING for me.  We brought him into our bed, where when he calmed down, he told me there were spiders in his bed.  His first bad dream?!?  Greg told me that he had (has?) reoccurring dreams about spider attacks - so strange! 

In general, I have noticed a LOT more acknowledgement of feelings from him across the board.  He tells me that he is "upset" when something happens he doesn't like.  He tells me when he is having fun.  He told me that a kid at school was being loud and "roaring like a dinosaur" and it scared him and he didn't like it.  (Cute).  I explained that the kid was just pretending and having fun playing, but Ben insisted that it was "not okay".

His long-term memory is impressing me lately.  I sometimes wonder if all of the photos and videos we take (and that he watches sometimes) is a factor in this.  I'm sure it is.  He likes to recall memories of things we did that he enjoyed and tell me all it - from a few days earlier, or from several months earlier.  This morning he told me about how we went to get ice-cream with Callie, Mira, and Maylee and then proceeded to tell me what kind everyone got :)

Favorites:

Movies: His current favorite movies to watch are Kung Fu Panta, Wall-E, and Horton Hears a Who.  We also took him to his first movie in the theater - Inside Out (which may officially be my favorite Pixar movie ever).  It was SO much fun!  He did so great sitting and watching (popcorn and soda helped...) and only had to get up and go potty 3 times ;)  But it's fun - feels like a whole new world of activities that we can do with him is starting to open up.

Activities: Helping me!!  He has gone from being a royal pain at the grocery store to wanting to push the cart, help me put everything into the cart, taking everything out at check out, and then when we get home he will carry every light bag (except the one with eggs) into the house!  He also will get his own yogurt out of the fridge, put his pull-up in the garbage in the morning, get dressed (most of the time), go potty (on his own, but so much less hesitation when I request him to go now than he used to), vacuum, use Windex to spray down the table outside and any window I will allow him to, and put his laundry into the basket.  It's so much fun and I love letting him help.

Parenting has been extra fun this year and has taught us a lot of lessons about patience, being clear and choosing our battles.  I am constantly reminding myself what it must be like to be 3.  Every time I find myself annoyed about something or needing a break, I try to remember that one day he will not be interested in playing with me anymore and I need to soak up every opportunity that he wants to engage.

Meal Planning: Week of June 22nd

Review from last week:

Talk about a total fail in meal execution this week! On Saturday, we did have a bomb potluck:


Sunday was leftovers.

Monday was grilled chicken and kale salad (Costco).

Tuesday was frozen pizza.

Wednesday I had a migraine so awful that I couldn't eat all day.

Today, I'm recovered and have kalua pork cooking in the crockpot and cauliflower rice roasting in the oven which will be dinner for the next 2 days :)

Plan for next week:

Saturday: TBD.  If we eat at home, I might make spaghetti squash with ground turkey sausage. 

Sunday: Father's Day! Hoping to grab brunch, visit my dad for a bit and grill something at home for dinner.

Monday: Tomato soup

Tuesday: Blue Apron Meal: Lamb & Risotto-Style Ditalini Pasta with Spring Onion & Green Beans

Wednesday: Blue Apron Meal: Miso Roasted Chicken with Spring Peas & Jasmine Rice

Thursday: Blue Apron Meal: Seared Salmon & Preserved Lemon with Red Quinoa & Pea Shoots

Week in Photos

It's been a pretty great week!  Summer is here and we are enjoying the longer days!

Ben started swim lessons!  We had attempted lessons at the Y back when he was much younger and it didn't go so well.  This time around, Greg and I were expecting the same outcome...but Ben surprised us and loved every second he spent with Coach Cole!  This pool is right down the street from us.  Literally.  Greg and Ben walked there!  He will be going every Thursday and I'm so eager to see him learn some skills :)
 

With the weather being so warm, I also decided a pool for our yard would be a good idea - and this one has been a huge hit.  

 



I bought a huge bag of balls to go inside - which has provided endless amounts of fun. 



The Christensens moved into their new home last week.  We went up on Friday and helped them unpack boxes while the boys played!

Meal Planning: Week of June 15th

Review from last week:

These chicken lettuce wraps immediately become a favorite after making them for the first time.  We agreed that we will make it with chicken breast next time vs. the ground chicken the recipe called for. 


The chicken avocado burritos were super simple to make.  A little bland, too - but did the trick.
 

This was a good one!  Arepas de Carne Molida.  The Arepas were made with a cup of masarepa, 1 cup of water and a pinch of salt - and then fried to make little patties). Yum.
 

Salmon burgers.  SO good.  A delicious dinner worth every carb.

Plan for next week: 

Friday: Tonight, we are heading up to Dan and Jeannette's new house to help them do a little unpacking and will probably throw something on the grill with them.

Saturday:  Dinner party!  Having flank steak and Mediterranean Orzo Salad.

Sunday: Leftovers

Monday: Mediterranean Chicken & Quinoa Salad.  (Had this at Panera Bread and planning to recreate: quinoa, kale, romaine, cucumbers, kalamata olives, tomatoes (I'll use bruschetta sauce from Trader Joe's), and toasted almonds with Greek dressing. Topped with grilled chicken.

Tuesday: Greg has plans to go out with friends, so Ben and I will throw something easy together.

Wednesday: Dinner at Shauna and Brandon's house!

Thursday: Crockpot Kalua Pork, slaw, and Cilantro Lime Cauliflower "Rice"

Week in Photos

Hilary was in town last week and we spent an entire afternoon/evening tasting wine and catching up on life.  We finished our day with dinner at Purple and dessert at Frost.  It was pretty perfect.

Lately, Ben's nap has gone later and later into the afternoon - and once he is down, it can sometimes be hard to get him back up!  We will go in and open the windows and turn on the lights and he will just grunt and turn back over.
 

A fire truck visited Ben's school and they kids all had such a blast (from what I hear)!

Last night, Ben woke up crying at 11 pm and for a good hour, Greg and I couldn't figure out what was wrong.  He finally let us know that his ears hurt (:/) and after a very unrestful night, we learned at the doctor this morning that Ben has an ear infection.  Not fun.

The good (?) news is that it explains a bit about why he has been SO cranky the past couple days, seemingly out of the blue. 

I'm home with him today.  I might have to join him for a nap soon!
