Meal Planning: Week of August 4th

Review from last week:

On Sunday, after returning home from our weekend away, we went to play at the park in Redmond and then had dinner at Hugo's.  Greg had purchased a Groupon after being told it was good.  The food is all organic, gluten free, etc. etc. etc., and the food tasted...pretty good.  It was super clean eating which was nice, but I think we both felt that we could have made something more delicious at home.  I did, however, LOVE the zucchini noodles I had there, so I'll be making that again this week at home!  They had a nice patio where Ben enjoyed some coloring....and by coloring, I mean 1 scribble followed by dumping all the crayons onto the table and trying to dump them on the floor and then freaking out that we wouldn't let him and then finally settling down when I offered him my phone to watch videos on.  Dining out - ALWAYS A TREAT.


On Monday evening we ate our dinner at home (chicken, mashed sweet potatoes and sauteed snap peas - one of my new favorite meals):




We were in a serious negotiation with Ben over how many more bites he needed to eat before he got to have a cake pop.  Spoiler alert: he didn't achieve his goal, so the cake pop was postponed until the next day.  


On Tuesday, I came across a picture of this Summer Cabbage Slaw Salad while scrolling through Instagram and I simply HAD to make it.  (It always helps when you have almost everything needed to make something already in the fridge)!  It was delicious and made enough for me to have for lunch the next day.  I even forgot the avocado and it was still filling and delicious.



On Wednesday, Greg cooked up some Costco smoked shredded pork and sauteed it with some BBQ sauce.  It was so delicious.  Apparently they have a smoked shredded chicken that we will be trying next time.  I made a simple salad of tomato/oregano/lime juice and roasted some Brussels sprouts and we enjoyed it on the deck with a couple margaritas.  Perfect.  Ben ate his pork with some shredded cheese in a taco shell and devoured the entire thing.



Plan for next week:

Friday:  Since I never made the chicken Parmesan last week, I'll make this on Friday with some roasted vegetables (asparagus or brussels I'm sure).

Saturday:  Saturday is the 7th annual SeaFair party at Jamie and Collin's house.  We are looking forward to a few mimosas in the morning, some sunshine in the afternoon and hanging out with all of their fun friends at their beautiful home!  We are both quite curious how Ben will handle the Blue Angels this year.  In terms of food, they always make a bunch of delicious snacks and I'm planning to bring a batch of this black bean and corn salad (new obsession, clearly).  That night, we will either be too full to eat much, or we will make the BLT chopped salad with corn, feta and avocado with grilled chicken or shrimp.

Sunday:  Salmon Roll Sandwiches and a big salad.

Monday: Last week when we went out to dinner, I had the most amazing "Zoodle" dish: raw zucchini noodles, tossed in truffle oil infused olive oil, with black olives, sunflower seeds, and tomatoes.  I'm going to make some to go with chicken tarragon.

Tuesday: Blue Apron Meal - Pan-Seared Salmon with Fennel and Heirloom Tomato Salad

Wednesday: Blue Apron Meal - Rice and Beef Stuffed Poblano Peppers with Lime-Crema Sauce 

Thursday: Blue Apron Meal - Chicken Sate with Peanut Sauce and Marinated Green Tomatoes

Big Boy Bed


Well, it's official this time.  After a weekend trial run in February that resulted in a momentary "he is growing up way too fast" mommy panic, we officially made the transition to the BIG BOY BED yesterday!!!  Having cute bedding and the desire to crawl in bed and read books with my little guy gave me the final push to make it happen, and I'm really glad we did.

The bed was delivered right before nap time, so after several rounds of jumping on and off of his new bed, he was very ready to take a nap.

I explained to him that playing/jumping on his bed was fine, but that during nap and bed time, he needed to lay down and sleep.  I asked him to stay in bed and let me know he was ready to get up after he slept, and he seemed to understand that well enough.

I had the monitor with me constantly and was so.freaking.excited that after 1.5 hours, he was still happily snoozing!

I was on a conference call when suddenly, after 2 hours, Ben apparently fell out of his bed in the middle of a DEEP SLEEP.  He cried the most panic-filled what-the-FFFFF-just-happened-to-me cry I have ever heard.  I rushed to get him and it, sadly, took awhile to calm him down.  We agreed that I would move his bed to a wall and make it more safe for night time.  (OOPS!)

I also immediately ordered these so we should have total peace of mind very soon.

But I'm happy to report that he went down to bed with zero problems last night and even slept in this morning - hooray!!

Cougle Family Vacation 2014


Another annual (except for last year, when Rachel was pregnant and I was sicccccccccccck so we decided to cancel) is in the books!  We were so fortunate to be able to spend the weekend at the cabin we stayed at two years ago - a family friend of the Cougans - and it was just as relaxing and fun as it was the last time!

We got on the road at nap time, which worked out perfectly!  Ben slept pretty much the entire way there.


Upon arrival, Ben spotted a big dump truck on the front porch - SCORE!  He had about a zillion trucks and cars to play with all weekend - it was pretty much all he did the 48 hours that we were there.


On Friday evening after we made dinner, we took a walk down to the water and Ben and Greg enjoyed throwing some rocks in.




The rest of our time there was spent eating, snacking drinking, lounging, hanging on the porch, going for walks/runs and for some of us, runs up the hill carrying a boulder - Peter is such a caveman when he works out ;)

I think my favorite part of the trip (aside from spending time with the people I love) was being entirely disconnected from our phones.  It was refreshing to not have anything to check (mostly out of habit) and it's something I'm trying to incorporate more into my daily life at home.

Heat Wave + Random Photo Catch Up

Summer has ARRIVED.  We had a week or two there where I was cursing the sun and heat (high temps really bring out the bitch), but now that we have had a few days of rain and cooler temps, I am ready for the sunshine back.  Ben had absolutely been being spoiled with daily trips to the park or the beach, so when a day came where we couldn't go outside, he couldn't even comprehend it! 

One evening we went down to the Kirkland waterfront to splash our feet in the water a little.


We met up briefly with the Mills family for ice cream which was so much fun:

This guy - ALWAYS with a truck or car in hand.  He has one from the minute he wakes up, brings one in the car, to the grocery store, to Callie's, and to bed (when we let him).

34 Months Old


34 months.  2 years and 10 months.  2 5/6 years old.

I remember when Ben was not even 1 yet, I would think back to the prior year and reminisce about how "last summer, I was X months pregnant", or "this time last [fill in the blank holiday], I was only X months pregnant", etc.

Now when I do that, it was 3 years ago - and it kind of freaks me out!  It's now been soooooooo long since I was pregnant with him, and almost 2 years since I last nursed him - but it continues to feel like both of these were very recent events.  I suppose this is the exact reason why time flies so quickly once you become a parent.

If I talk obsess with you on a regular basis, then you already know about how back and forth we have been about whether or not to have another baby.  I'm not sure about how other people feel when making this decision, but for me, a huge part of it is the inability to come to terms that Ben is no longer a baby himself!  This, in addition to our original plan of only having 1 kid, (plus finances, lifestyle, visions for the future) has us leaning heavily this way these days - however, I will admit - watching so many people around us having (or soon to be having) their second child and witnessing that whole adorable family of four thing has had me wavering a bit from time to time.  

The good news is that I loved being an only child, and have TRULY treated each of Ben's milestones with the thought that this would be the last time I experienced each of them.  (Which could explain why I have not been in much of a rush to move him into the next stage along the way).

But whether I am pushing him or not, he is doing it all on his own:

Ben now speaks in full sentences that I would say are understood by others about 80% of the time.  In fact, we had our "exit testing" in speech therapy last week, and our little dude essentially aced (as in, was perfectly on track with his peers) each area of testing.  In fact, the area he tested highest in?  COMMUNICATION.  (!?!?!) 

It has cracked us up to hear him tell us exactly what he is thinking:

In the morning when he wakes up, I hear him over the monitor:  Mama, I'm all done going night night.  Mama, I want milk, mama.  I want mama/dada's bed.  Mama, I want lunch.  Go to the park!  Run, jump, play, dance.  I want my trucks.  THOMAS!

When he is playing with his cars: Drive cars, mama.  Crash!!!  Time to wash the cars.  (He carries them to the bathroom).  Wash in sink.  Car wash - I cry.  (He remembers - quite vividly - how much he hated the car wash last time we went, which was months ago).

I've also caught him saying "One second!!" lately, which clearly is what I must be saying to him about a hundred times a day!

Loves: Trucks, trains, trips to Costco, tickles, jumping on the bed/couch/ground, being chased, hide and seek, taking all of the pillows off the couch and making a big pile to jump in/on, helping me take the garbage out, playing in the sink, going to the park with Greg, Monsters (movie), Cloudy with a Chance of Meatballs (movie), music: the "Happy" Song, Scream and Shout (Britney), "Boom Boom Song" (Black Eyed Peas), pointing out every letter, number and color we see, alerting me to each motorcycle he hears/truck he sees, watching videos on YouTube (which he pronounces "Videots", going on walks around the neighborhood, picking out his clothes ("Ben gets to pick!!!"), singing "Twinkle Twinkle", Mira and Maylee (and Callie, too!), Fridays with Grandma, Grandma's iPad, the "blankie Grandma make" (the closest thing he has to a "lovie"), kisses and hugs.

Sleep lately has been good most of the time.  It has become clear that the whole "you will eat what I make for dinner" plan I was aiming for is not working well to our benefit when it comes to sleep.  If he doesn't have a big meal or a hearty snack at night, he will often wake up at 4 am asking for milk or "lunch".  We are working on it.  I would say that 5 out of 7 nights a week, he goes down to sleep happily and we don't hear from him until the morning - but those other 2 nights can result in him needing to come back into our bed to snuggle until he is almost asleep (and sometimes letting him sleep with us for a few hours), or will require us to get him a snack or some milk.  He also still naps an average of 2.5 hours a day (sometimes longer!) so perhaps that needs to be shortened to help him go down at night better....

....but I'm certain all of this will change because his BIG BOY BED arrives on Tuesday.  Hell shall break loose.  Stay tuned.

Ben is wearing 3T clothing for the most part (plus a few favorite 2T pants and T shirts that I try to squeeze him into and some 4T jammies that we got handed down from Laryd).  I got him some size 8 tennis shoes and sandals a few months back that should last him awhile.

As far as potty training goes, we are not rushing it at all.  We read books and watch videos about the potty and allow him to decide when he wants to try it (which is usually only before bed and is used as a tactic to stay up later) ;)  He has pooped on the potty exactly twice.  I bought him some pull ups for when we are around the house, but he FREAKED out when I put them on them and requested a diaper immediately.  A selfish part of me really hopes that we can wait until AFTER our trip to Mexico for him to be fully out of diapers, because it's going to really suck to have to put down our margaritas and rush him to the bathroom every 10 minutes - but it's all up to him! ;)

I would say the biggest thing I have realized over the past few months of parenting is how much I need to let go of my own selfish desires to have a child who always listens to what I say, cleans up after himself constantly and is always quiet when I want him to be.  :)  We are raising a little PERSON, who has his own feelings, thoughts, ideas of what he wants to do, and different ways to learn.  I am starting to understand more and more that my job as his mom is more about keeping him safe, letting him explore, letting him be loud/emotional/willful, and guiding him with good morals and boundaries.  

A few weeks ago at the beach, Ben was running around and I noticed myself trying to keep him away from a water fountain (that was getting him wet) and coaxing him to walk the direction I wanted, and to hold my hand (when it really wasn't necessary).  I'm sure with my words I was telling him to "listen to mama", to the point where when he nearly ran out into the parking lot away from me and I yelled at him to STOP!!!, it probably didn't sound drastically different from the way I had been acting all morning.  I truly want him to know the difference when something could be dangerous, so I'm making an effort to not coach him through all of the other moments just because it might make my life easier.

Anyway, being a mom is the best thing I've ever done and while the growing pains can be a challenge, I'm more than up for it.  Anything to give Ben the best little life I can :)    

Meal Planning: Week of July 28th

Review from last week:

Not pictured: Chicken Paillard (still in our top ten), dinner at Robin and Garrett's (delicious flank tacos and great company!), and chicken wedge salad (enjoyed technology free, apparently - something we both need to work on at dinner time (and in life).

Never made: Snow pea and scallop quinoa.  Opted to make chicken tarragon with sauteed snow peas instead, in order to use up the fresh tarragon I had, and it was REALLY good.  My favorite part about this one was that I only had to loosely follow the recipe I had googled earlier that day.  I had some of the ingredients, but not all, and I cooked it a little differently - which is not something I am typically able to do.  After lots (and lots) of cooking practice, I suppose I eventually would be able to do a few things on my own!



Flank steak and corn/black bean salad with Maureen and Vitaliy on Sunday!  My favorite part about this night was Ben and Maeve playing so well together.  (He pissed her off royally the last time they were together).  But this time she was inviting him into the bathroom with her each time she had to go, so you know, he must be back on her good side ;)



Plan for next week:

Every so often, (usually after a Costco run) we end up accumulating so much extra stuff in our freezer that I need to back off of the "new" meal planning and use up everything that we have.  With us heading out of town for the weekend, this is definitely the perfect time.

Friday and Saturday night will be spent at a cabin in the woods by the lake with the Cougles!  It is going to be so nice to be away for a few days (and share in the cooking fun with our friends)!

Sunday: We will likely have food left over from the weekend to take home/eat, but if not, we will throw some burgers on the grill and have with a salad.

Monday: Chicken Parmesan and broccoli with mizithra cheese

Tuesday: Halibut Chipolte with sauteed onion

Recipe:
*2 chipotle chiles in adobo
*3 tablespoons tequila or vodka
*2 tablespoons fresh lime juice
*1 tablespoon ketchup
*1 tablespoon adobo sauce, from chipotle can
*1 clove garlic, chopped
*2 teaspoons packed light brown sugar
*1/4 teaspoon salt
*1 tablespoon olive oil

Directions:
~Throw it all into a blender and hit puree

Wednesday: BBQ Pulled Pork (Costco) and coleslaw.

Thursday: Chicken breasts prepared with whatever herbs I have in my fridge with mashed sweet potatoes and a roasted vegetable.

Meal Planning: Week of July 21st

Review from last week:

Friday was a hot and draining day.  I was so happy to have dinner all prepped and ready to go.  The black bean & corn salad was delicious.  I had basically filled up on it while the steak was grilling - I just couldn't stop sneaking bites in!



Forgot to take pictures of our BBQ with the Olsons - aside from this adorable one of the kids:



We tried a new recipe from Bon Appetit - Moroccan Chicken Brochettes with garlic yogurt sauce - and it was really great and simple.



I made a "pasta" dish with Italian sausage, "golden" garlic (i.e. toasted in a pan), tomatoes, red pepper flakes, basil and Parmesean that I thought was pretty good (although I don't think Greg or Ben cared much for it).  



On Wednesday it was so freaking hot that we opted to go out for pizza at Elliott Bay Pizza - great pizza (and beer).  


Tonight, I had both cod and asparagus that I needed to use up, so we had lemon pepper cod and roasted asparagus with a poached egg on top.  


Plan for next week:

Friday: Our neighbors are coming over for dinner, so we thought we would make Chicken Paillard.  Easy to make ahead the night before and throw on the grill!



Saturday:  Greg and I are going out to dinner while Ben hangs with Grandma :)

Sunday: BBQ with Maureen & Vitaliy + the kids.  I think I'll make another batch of the Black Bean & Corn Salad and have Greg throw some tandoori chicken on the grill.

Monday: Toasted Quinoa Salad with Scallops and Snow Peas

Tuesday: Dinner at Robin, Garrett and Graycen's house!  It's been awhile since we have seen them and we are so excited to see their new home!


Wednesday: Chicken Wedge Salad with Apple, Walnuts, and Lemon-Blue Cheese Dressing

Thursday:  With plans to go away for the weekend, I thought a night of "use what you have" for dinner was in order.
