On Sunday, we decided we were not feeling meatballs. We did a huge Costco run and ended up having kielbasa, chips and guacamole for dinner.
Monday I made chicken and avocado mash lettuce wraps with a side of chips and quesadillas.
Blue Apron! This Hake dish had an Asian flare and I liked it a lot. It was pretty quick and simple to prepare, which is always nice.
The steak dish was probably my favorite this week. The recipe called for a side of crème fraiche mixed with dill and it was freaking amazing. I think we will make that a lot in the future. It would go especially good with salmon.
The last of our Blue Apron dishes were these ground turkey patties mixed with bulgur, parsley, onion and a few other seasonings. I liked these a lot - especially with the Greek yogurt sauce that went with it.
Plan for next week:
Friday: BBQ at Dan and Jeannette's tonight- Halibut Tacos!
Saturday: Dinner at the Cougan's!
Sunday: Salmon Role Sandwiches
Monday: Crockpot Santa Fe Chicken
Tuesday: Leftovers
Wednesday: Cod & Squash En Papillote
Thursday: Leftovers (Or, if we don't have any, pasta/arugula/slow roasted cherry tomatoes and parmesan).
Friday: Chicken with Sauteed Snow Peas and Mashed Sweet Potatoes
