Meal Planning : Week of May 18th




Review from last week:

The kalua pork was delicious as usual.  We used pork tenderloin this time and I made sure to turn the crockpot off after 6 hours or so so the meat wouldn't dry out.  It was delicious.  And I lovvvvvvvvved the lime and cilantro cauliflower rice.  Definitely will repeat this meal a lot - especially this summer.

 
These salmon kebobs were also AMAZING.  And lucky us - we have plenty more salmon in the freezer.  We had it with zoodles and arugula salad.

Working hardhardHARD to meet some deadlines at work before we skip town.  Working lunch and working dinner on Wednesday!  Pasta, (we tried the brown rice and quinoa pasta from Trader Joe's and I thought it was great) slow roasted cherry tomatoes, arugula, Parmesan.


Last night was stir-fry chicken and veggies with Trader Joe's sweet chili sauce.



Tonight we are literally eating up ALL of our perishable items and having breakfast burritos with bacon, egg, avocado, sour cream and salsa with a side of apple/pear/grape/strawberry fruit salad :)

Plan for the week after next!

Hallelujah!  Our vacation has finally arrived!  No meal planning for this coming week, but because I'm nuts, I wanted to have my grocery list finalized and meal plan put together so that when we get back, we can hit the grocery store and be prepared for the dreaded week of getting back to the grind.

Sunday: Ricotta Meatballs with Chianti Sauce and salad.

Monday: Leftovers

Tuesday: Blue Apron Meal: Flat Iron Steak with Ramps, Fingerling Potatoes and Shaved Asparagus Salad.

Wednesday: Blue Apron Meal: Rice Flake-Crusted Hake with Sauteed Daikon Radish and Yuzu-Soy Sauce.

Thursday: Blue Apron Meal: Turkey Kibbeh with Cucumber Salad & Mint-Yogurt Sauce.
