Meal Planning: October 23rd - 29th

Review from last week:

On Saturday, Greg grilled up some delicious fillets as my early birthday dinner and I made a Kale Caesar with crispy chick peas to go with it :)


On Sunday, Greg smoked a beer can chicken wrapped in bacon!  Amazing.  I made mashed sweet potatoes and a salad.  #teamwork

 

Tried a new recipe this week that was awesome: Skillet Chipolte Chicken Enchilada Bake:



The rest of the week was leftovers.

Plan for next week:

Monday: Roasted Red Pepper and Prosciutto Stuffed Chicken Breast and Roasted Rosemary Carrots

Tuesday: Turkey Taco Spaghetti Squash Boats

Wednesday: Paprika White Wine Bucatini Pasta

Thursday: Leftovers

Friday: Grilled Cod with Zucchini Noodles with Roasted Tomatoes

Saturday: Sausage and Pepper Brunch Pizza for brunch, and Japanese Pancakes

Sunday: Sweet Potato, Kale and Black Bean Enchiladas
