Meal Planning: Week of June 22nd

Review from last week:

Talk about a total fail in meal execution this week! On Saturday, we did have a bomb potluck:


Sunday was leftovers.

Monday was grilled chicken and kale salad (Costco).

Tuesday was frozen pizza.

Wednesday I had a migraine so awful that I couldn't eat all day.

Today, I'm recovered and have kalua pork cooking in the crockpot and cauliflower rice roasting in the oven which will be dinner for the next 2 days :)

Plan for next week:

Saturday: TBD.  If we eat at home, I might make spaghetti squash with ground turkey sausage. 

Sunday: Father's Day! Hoping to grab brunch, visit my dad for a bit and grill something at home for dinner.

Monday: Tomato soup

Tuesday: Blue Apron Meal: Lamb & Risotto-Style Ditalini Pasta with Spring Onion & Green Beans

Wednesday: Blue Apron Meal: Miso Roasted Chicken with Spring Peas & Jasmine Rice

Thursday: Blue Apron Meal: Seared Salmon & Preserved Lemon with Red Quinoa & Pea Shoots

Friday: Grilled chicken and salad
