Meal Planning: July 29th - August 4th

Review from last week:

Kalua Pork over Cauliflower rice with cabbage slaw:


Greg has perfected his rib-smoking process.  We had the Mills family over to enjoy them with us!


And one of my favorite new recipes I've tried lately, these zucchini noodles tossed in sun dried tomato pesto!  The zucchini was left raw and it went so nicely with Greg's amazing grilled chicken.  YUM.

Meal Planning: July 22nd - 28th

Review from last week:

I've been trying a lot of new recipes lately, and it's been fun!  

This Pizza Spaghetti (Squash) Casserole was a big hit.  Greg really liked it and I made it a second time for lunches during the week since I had all the ingredients.  Big thumbs up.


Just a big salad.  Nothing special.


Grilled scallops courtesy of Greg + roasted green beans.


Mexican Quiche with sweet potato crust.  This was actually more of a fritatta (it didn't have the consistency of a quiche), but it was good!  Greg surprised me by how much he liked it (as in, he ate half of the skillet, LOL)!  He had it with a greek yogurt/siracha dressing I had made for the buffalo chicken bowls last week and it was an excellent combo.  I personally thought it would make a better breakfast than a dinner and next time I think I'll add bacon :)


These lentil bowls are basically just an assortment of roasted veggies and cooked lentils and they were so filling and delicious.


Blue Apron this week!

This pasta was so simple but SO delicious!  Really enjoyed this one and will definitely make it again:

This dish also had a side of zucchini slaw - another super easy dish I'm sure I'll make again.  I had leftovers and added some cherry tomatoes to it:


Tonight is Caribbean Curry Chicken!

Plan for next week:

Saturday: Saturday we are heading down to West Seattle to check out Lisa and Evan's new house!  While their big moving day was on Wednesday, we are hoping to be somewhat helpful and are looking forward to hanging out there for awhile.  Dinner is TBD.

Sunday: Smoked Ribs and a green salad with this salad dressing

Monday:  Crock Pot Kalua Pork, Cauliflower Rice and Cabbage Slaw

Tuesday: Leftovers

Wednesday: Grilled Chicken with Sundried Tomato Zucchini Noodles (replacing the pork chop with chicken from this recipe)

Thursday: Grilled Chicken (making extra on Wednesday) salad with this salad dressing

Friday: Butter Lettuce Salad and grilled scallops

Week in Photos: Rock Climbing, Boating and Remlinger Farms!

Ben and I have been going to the climbing wall at our gym for the past 3 weeks.  It's been super fun to see him get more and more comfortable, and get higher and higher on the wall each time.  This past weekend I decided to try it myself and felt SO BAD ASS when I made it to the top!  It was so much harder than I remember it being (upper body strength - ugh), but it was so fun to be up there and try to figure out which direction to go next to get to the top.  I'm hoping that Ben continues to try and make progress.


The crystal growing set we got for Ben was a lot of fun.  After a few days they started to grow and after a couple weeks they were huge!

My mom and I took a day off and took Ben up to Remlinger Farms and it was a blast!  So perfect for Ben's age and we loved it.





Ben has played 2 of the 5 t-ball games we have scheduled this summer.  It's been fun (and hilarious) to watch.  He really is good though and is always so excited to play with his friends in a "real" game.



We spent last Sunday boating with Jamie, Collin and Jailyn + a couple of their friends.  Jailyn is now speaking SO many words and I loved talking with her all day.  She would wave and say "hi" a zillion times and loved to eat "Schnacks" and it was so adorable.  Ben really had fun with her, too.






These hard seltzers are so great.  They taste just like sparkling water.  Great boat drink! (Great recommendation, Kristin)!

Meal Planning: July 15th - 21st

Review from last week:

The turkey taco spaghetti squash boats never disappoint.


Greg grilled burgers and I made kale, caramelized onions and slow-roasted cherry tomatoes to go with mine.


Tried a new recipe: Buffalo chicken with zucchini and carrot noodles.  (I've been really into my "Inspiralizer" lately and with the warm weather, vegetables have been so much more appealing vs pasta with meals). This one was really really good (and filling)!

Week in Photos: Playdates, Playdates, Playdates!!

Grandma Wednesday ice-cream date!


Not having lined up a summer camp for Ben last week, Ben got to enjoy a day over at Shauna and Brandon's and did NOT want to leave when I picked him up at the end of the day! 






He spent the next morning with Jaxon and Beckett!  (Such a lucky kid - and we are so lucky too to have friends willing to watch Benny when we need it)!


Rachel and I had a playdate and enjoyed sushi and wine on her deck until (and after) the sun went down.

Ben's friend from school, Emogene, turned 5 and had an epic birthday party at the zoo!  It was fun for Ben to reunite with his school friends who he hadn't seen since the last day of school.
