Meal Planning: Week of February 1st

Review from last week:

Every time I make these meatballs, I'm amazed by how delicious they are.  The Chianti sauce is truly one of my favorites.
 

Made Thai Beef with noodles again this week.



Plan for next week:

Sunday: Taco Lettuce Wraps

And soup for the week: Slow Cooker Moroccan Lentil Soup 

Monday: Creamy Herb Chicken

Tuesday: Cleanse day (ha, don't ask).  Something Greg and I are trying, mostly to see if we can do it.  Makes for one less day to meal plan ;)

Week(s) in photos: Edmonds Beach, DC Work Trip, and 2 Birthday Parties!

A bunch of photos from the past couple weeks, completely out of order.

Benny and I enjoying a movie + popcorn date night! 


A random sunny Sunday where we had zero plans.  We went down to Edmonds Beach to walk around and throw rocks in the water. 


It was completely EMPTY since the Seahawks game was on at this time.



We stopped over at the Cougans' house to watch the end of the game with them (amazing, shocking win for the Hawks!!).  After Peter left for work, Greg and I debated hitting the gym....but we were quickly distracted by the idea of Bloody Mary's and lunch at Anthony's Beach Cafe with Rachel and Raleigh. 

It was a perfect day to go outside after we ate and let the boys play in the sandbox.  I could totally go for a repeat of last Sunday, that is for sure.


Cooking in the kitchen with my buddy.  I love how much he loves to help me cook.  I hate how much he hates to eat anything we make.

Greg has had a terrible time shaking this cold that we all have been struggling with for the past month.  His came back with a vengeance which meant lots of (sweaty) naps on the couch :(  I think he is almost done with it now.


Ben drew our family.  I'm the pear.



Kristin and Craig bought this adorable hoodie for Ben just because they felt he had to have it.  He loves it SO much!


Maeve turned 5 and had a super fun birthday party at Jump, Rattle and Roll!  Ben had been talking about it multiple times a day prior to the party, and now we spend our days going over each detail about how much fun we had there :)



A week later, Raleigh turned 2 and had a tool-themed birthday party!

I spent Tuesday - Thursday in DC last week for work.  We were supposed to return a day later on Friday night, but due to the blizzard they were predicting, we decided to take an earlier flight - and thank goodness we did!  

Unfortunately, it left very little room for exploring the city. We did have a delicious dinner at The Willard Hotel, which is kitty-corner to The White House.

 



And I got to finally try Bone Marrow.

Enjoyed a relaxing Sunday playing with Ben.  (The Paw Patrol pups had an emergency - 10 kitties were missing!  We found them in Ben's room.  THEN, the puppies got attacked by a shark (Ben's blue bird pillow) and when we finally rescued them, we put them all down for a nap under his blanket).

Meal Planning: Week of January 25th

Review from last week:

Not much cooking last week.

Burger from Blue Apron.


Prosciutto and red pepper stuffed chicken breast with this amazing quinoa rice we got at Costco.



Plan for next week:

Sunday: Ricotta Meatballs in Chianti Sauce

Monday: Chicken Nuggets and salad. 

Tuesday: Leftover meatballs


Wednesday: Chicken Pot Pie

Thursday: Thai Beef with Peppers.  I bought extra flank steak when we made this a couple weeks ago and froze half if it to be able to make this again later.

Friday: Leftovers


Saturday: Greg is out of town for the night.  Ben and I have a playdate/pizza party planned with Shauna and Bronson :)

Meal Planning: Week of January 18th

Review from last week:

Bison burgers wrapped in lettuce with chipolte-yogurt sauce.  


Spaghetti Squash with Meat Ragu.  This was probably my least favorite of the spaghetti squash dishes I've made lately - probably because I didn't add a bunch of cheese ;)



This may have been my favorite thing I made last week.  Thai Beef and Peppers with Japanese Noodles.  So, so good (and easy).

 

This "Ragu" with Japanese Rice Cakes was amazing.  I'd love to find these at the store and make this again.

Salmon over spinach and farro with salsa verde.


Tonight is the last of the Blue Apron meals from last week.

Plan for next week:

I'm heading out of town on Tuesday for a 4 day work trip.  Logistically, this will be a bit of a challenge but luckily, I know Greg with the help of my mom totally have it covered!  The one thing I know I can do is get the fridge stocked for my boys and have dinners planned out for them to make their evenings go a little smoother :)


Tuesday: Tomato Soup and Grilled Cheese

Wednesday: Frozen Pizza

Thursday: Spaghetti and Meatballs (the last of what Marcia made us to freeze from when she was visiting)

Friday: Chicken Enchiladas (the batch I made to freeze a couple weeks ago)!

Saturday:  Raleigh's birthday party!  We will grab something for dinner afterwards on the way home.

Meal Planning: Week of January 11th

Review from last week:

Chicken Pot Pie.  I loved having this as leftovers for lunch, too.


Chicken Enchiladas.  Yum.  I really, really love this recipe.



The cod and quinoa dish from blue apron was interesting, in a good way.  Lots of protein.


The chicken noodle soup from Blue Apron this week was kind of boring.
 

In contrast, these Juicy Lucy burgers were AMAZING. Definitely the most delicious burger I have ever made.


Plan for next week:

I'll also make Crockpot Kalua Pork, Coleslaw and Cauliflower Rice.

I found that last week, 2 big meals wasn't quite enough to last as leftovers for 2 additional days since we often eat leftovers for lunch also. 



Tuesday: Leftovers
