Memorial Day Weekend

We had such an awesome and fun Memorial Day Weekend - complete with great weather and lots of fun with friends.

Friday night started out with wine after work with Melissa while the boys played.

On Saturday morning, Greg golfed while Ben and I went to Edmonds to walk down to the Farmer's Market with Rachel and the kids. 




Totally impossible to get one with both of them looking at the camera :)









Pepper was super into me and I was SUPER into that!  Lots of snuggles at the park and on the walk home :)





We did our best to get a photo of all of us.





On Saturday evening, we went to Melissa and Marc's for a BBQ while Ben, Sammy and Sully roamed free in the back yard!  It was such a fun and relaxing night :)



Sunday morning and afternoon was spent:

  • Getting bagels at the Woodinville Bagel Bakery (our favorite breakfast spot)
  • Going to Target
  • Going to Value Village where I scored a $3 Mariner T-shirt
  • Going to the park to teach Ben to ride his bike without training wheels - we aren't there yet, but we've made progress!
  • Getting the car washed
  • Being suddenly ATTACKED by grass pollen - which I THINK is the root of my allergies.  I'm starting to wonder if Ben has them too because he has been coughing more and has been snottier (literally, not in a bratty way) than usual.


Despite my allergies, Greg and I had a long-planned date night at Salare - a place that has been on my list for awhile, so we went ahead - and it was incredible.













On Monday, we went to the Mariner Game!  The weather was absolutely perfect for it too!

Meal Planning: May 27 - June 2

Review from last week:

I was shocked how much we like this one.  Me more than Greg, I'm sure, but he really liked it too! I will definitely make this one again.

The beyond burgers were also delicious!  I swear we aren't becoming vegans, but less meat is definitely not a bad thing and this is a great meat alternative.


Made this meal again.  I felt pretty bad heating up these leftovers in the microwave at the office the next day for lunch - but oh well.  It tasted great.


"Real" burgers:


My mom made clam spaghetti and we tried it with zucchini noodles mixed into the regular noodles.  It added an amazing crunch - I'll do this again.



Plan for next week: 

For lunches, I'm going to make Chickpea Tuna Salad (from Inspiralized and Beyond)

Also, a batch of Edamame Hummus for snacks:

Ingredients:

1 bag (12 oz) frozen shelled edamame
2 cloves garlic
2 tablespoons tahini

2 tablespoons olive oil
3 tablespoons lemon juice
3/4 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon black pepper


Sunday: Out to dinner

Monday:  We are going to our first Mariner Game of the season!  Planning to make a Rosemary Chicken Salad with Bacon and Avocado for dinner when we get home.

Tuesday: Cauliflower Parmesan with Zucchini Noodles because it's so much fun to scare Greg with vegetarian recipes and then watch him enjoy them!

Wednesday: Grilled Chicken, Mashed Sweet Potatoes and Sauteed Snap Peas

Thursday: Cheeseburgers

Friday: Chicken Wedge Salad

Saturday: TBD

Week in Photos: A Busy Weekend!

One of the strongest traits that Ben has inherited from me is his little Type A personality.  I've got him laying his clothes out for school the night before (he is getting VERY particular about his whole "look" these days - all athletic gear all the time), he is extremely precise about time (always quick to correct us when we call 1:28 "1:30"), and most recently - I found a to do list he had made for himself!!  Love it.


However one area where he isn't as on top of it is brushing and flossing his teeth.  And apparently we aren't doing a good enough job of reminding him!  

Chalk one up to Greg's genes: cavity-prone teeth! ;)

 

We had a super fun weekend this past weekend.  On Friday, we visited our friends Jamie and Collin to see their new house in Snohomish!

On Saturday morning after working out, we went to the zoo:



Followed by a birthday party!


Followed by dinner out!

On Sunday, we got up early to go watch Greg cross the finish line at Husky Stadium for Beat the Bridge! 

Ben and I had fun wandering around campus while we waited, taking selfies inside the stadium, and eating snacks!


 






After the race, we went to get some brunch and went to Gameworks!  When we got home, I did some meal-prepping while the boys spent an hour weeding - and then Greg and I tackled cleaning and organizing the garage.  A productive day!

Week in Photos: Mother's Day and the Science Fair

Mother's Day 2018 was a beautiful 80 degree day in Seattle!  I started my day off by picking up my mom and Shirley and meeting Lisa in Seattle for brunch!  Afterwards, we went to see Lover Never Dies - the sequel to Phantom of the Opera - and it ALMOST ruined one of my favorite Broadway shows of all time.  It was so bad - so cheesy - so hard to watch!  Yikes.  Luckily, I'm going to just pretend it never happened and have my faith in the show renewed when I see Phantom (the ORIGINAL - THE ONLY) in August.




Ben made me this super special and cute Mother's day treat at school :)

That evening the boys made me dinner and Ben fell asleep super early on the couch while we watched Black Panther.  A great day!



Ben's school's Science Fair was this week and it was so cute to see what all the kids did!







Last month Ben was invited to a birthday party at a Martial Arts studio and was given 2 free weeks to try it out!  I took him this week and he LOVED everything about it!  Unfortunately the dude is SUPER busy this summer with baseball, swim lessons and soccer - but this may be something he gets into in the winter months!
