Meal Planning: Week of June 1st

Review from last week:

Salmon roll sandwiches.  I highly recommend this recipe - it's really delicious.  Had it with butter lettuce/pistachio salad.

Hilary and Violet came over for chicken, mashed sweet potatoes and salad (and Prosecco)!
Crockpot Santa Fe Chicken - one of Greg's favorites - and always makes a ton.  Had this twice (and once for lunch)!
After another long day at work for me on Wednesday (not loving this trend lately, but whatever), Greg made dinner for us - Baked cod, quinoa and zucchini with parsley, feta and garlic butter.  Yum. 


On Thursday evening, Greg and Ben enjoyed leftovers while I hung out with Kristin!  We walked through her new neighborhood and came home to have the most delicious dinner! :)





Dinner tonight is up in the air.  A trip to Ivar's for fish and chips on the water might be in order to celebrate this amazing weather we are having!

Plan for next week:

Saturday:  Hilary and I are getting together for an afternoon/evening of wine tastings, dinner and whatever we want (no kids)!  Looking forward to this :)

Sunday:  Planning a day of yard work (more flowers!), window washing (now that the birds are gone for good, I Greg can finally clean their shit off my picture window :/) and other random household tasks.  The weather is supposed to be great, so Greg is going to grill flank steak and asparagus and I'll make the dill/crème fraiche sauce to go with it.

Monday: Clam Spaghetti

Tuesday: Burgers with pub cheese sauce per Greg's request (sauce from this recipe)

Wednesday: Leftovers

Thursday: Cod Tacos with Sriracha cream sauce and guacamole.

Friday: Tomato Soup and grilled cheese sandwiches.
