Meal Planning: Week of May 4th

Review from last week:

After a long day at work clearing out the office (we had truck-loads of junk we took to the dump and boxes and boxes of files we took to storage), I was exhausted and not interested in cooking just for myself.  Jack in the Box it was! 



I made the cauliflower-fried rice and grilled chicken on Saturday and it was really good!  The soy sauce and sesame oil helped mask the strong cauliflower taste.


BLT Salad with corn, feta and avocado with grilled chicken.  Always great, and always leftovers for lunch.

 
These chicken and avocado mash wraps may have just worked their way into our regular rotation.  As much as I love Blue Apron, those meals do tend to take a little longer to prepare.  This is a quick and easy recipe that I think we will make a lot!
 
 
Thursday was the most delicious "zesty" lime, shrimp and avocado salad with Caprese salad.
 

  
Tonight we are having Dan, Jeannette and Laryd over to help celebrate Greg's birthday! 41!!!!  We are having kalua pork, 2 kinds of cilantro lime rice (regular and cauliflower) and cabbage slaw....and of course, CAKE!  Ben has not been able to stop talking about the cake all week :)
 
Plan for next week:
 
Saturday: Grilled Salmon Kebabs and Caprese Salad.
 
 
Monday: Pasta with arugula, slow roasted cherry tomatoes, and Parmesan cheese.
 
Tuesday: Tomato basil soup and grilled cheese sandwiches
 
Wednesday: Stir-fry Chicken with sweet chili sauce and sautéed veggies.
 
Thursday: Leftovers.
 
Friday: Egg and bacon "breakfast" (for dinner) burritos.
