Meal Planning: July 15th - 21st

Review from last week:

The turkey taco spaghetti squash boats never disappoint.


Greg grilled burgers and I made kale, caramelized onions and slow-roasted cherry tomatoes to go with mine.


Tried a new recipe: Buffalo chicken with zucchini and carrot noodles.  (I've been really into my "Inspiralizer" lately and with the warm weather, vegetables have been so much more appealing vs pasta with meals). This one was really really good (and filling)!


Saturday: Pizza Spaghetti Casserole

Monday: Mexican Quiche with Spiralized Sweet Potato Crust

Tuesday: Blue Apron Meal:  Leftovers

Wednesday: Blue Apron Meal: Smoked Gouda Cheeseburgers with Summer Squash Slaw

Thursday: Blue Apron Meal: Caribbean Chicken Curry with Roasted Plantain & Coconut Rice

Friday: Saffron and Tomato Bucatini Pasta with Summer Squash and Basil
