Meal Planning: October 7th - 13th

Review from last week:

Greg threw off my meal plan over the weekend and declared he HAD to grill burgers (which I always kind of love).  We made a special sauce to have with them and used up extra bacon from breakfast.  Delicious.



I roasted up some Brussels Sprouts, sweet potato, and green beans and made lentil bowls for dinner one night (and lunch a few days).


Tried a new recipe - zucchini noodle spaghetti puttanesca.  It was good, but very watery with the zucchini noodles cooked.  Next time I'd try this over raw zucchini noodles (and probably add meat to the sauce).


Was inspired by a new episode of Pioneer Woman recently when she made Texas Braised Brisket Tacos.  I made a cabbage slaw to have with ours (cabbage, cilantro, green onions, red onions, olive oil and lime juice) and then made avocado lime crema to put on top.  Yum.


Hoisin Chicken with Yu Choy (because I messed up and purchased that instead of Bok Choy - turns out they are essentially the same thing)!


Plan for next week:

Saturday: Celebrating my birthday (a little early) with wine and appetizers and friends at home :)

Sunday: Crock Pot Turkey Breast with Roasted Brussels Sprouts and Mashed Sweet Potato

Monday: Leftovers

Tuesday: 10/10! It's our 10 year anniversary!!!  Due to an upcoming trip and the general chaos that always seems to come with the fall (and especially for us in October!), we are going to keep our anniversary celebration simple this year and go out for pizza as a family after work/school! :)

Wednesday: Leftover pizza and salad

Thursday: Pan Seared (or grilled) Chicken with Basil-Pesto Zucchini Noodles

Friday: TBD
